In this cold weather, all you want for breakfast is something warming, delicious and comforting. Something to make waking up to the chilly mornings that little bit easier.
For me, it’s porridge – I LOVE a hot bowl of porridge on a wintery morning. Even Alex (previously someone who thought porridge was boring and tasteless) turned round to me the other day, turned down the leftover chilli cheese eggy bread I said I had for him and said “I’m actually looking forward to my porridge this morning”. I was shocked.
I like to experiment with my toppings to shake things up and make them seasonal. So as it’s Christmas in less than three weeks (YES LESS THAN THREE WEEKS! It’s flown by!) I decided it was about time I shared my festive porridge recipe with you.
Slightly sweet, with the aroma of festive spices coming through, this bowl of hot, creamy porridge, is absolutely delicious – and to me, tastes just like Christmas.
It’s so simple too. Here’s how it’s made…
Ingredients (serves 1):
- 1 medium apple, peeled and chopped
- 1 tsp. golden caster sugar
- 1 tsp. cinnamon
- 1/2 cup oats
- 1 cup milk (I used skimmed, but you could use semi-skimmed or almond milk)
- 1 tbsp. mincemeat
- 1 small handful of cranberries (optional, to serve)
- Place the apple in a sauce pan, add 2 tbsp. tap water and the sugar, and heat over a low heat until the apple is soft. Don’t cook on high, as you don’t want a mushy apple.
- Once soft, stir in the cinnamon. Add the oats and milk to the pan, stir well. Cover with a lid and continue to cook over a low heat for 5 minutes, stirring regularly to avoid the porridge sticking to the bottom.
- When the oats have thickened, forming a slightly runny porridge, remove the lid, add the mincemeat and stir continuously for 1 to 2 minutes, until well combined and hot throughout.
- Serve, topped with the cranberries.
There you have it. One simple, yet tasty bowl of festive porridge.
You could always add nuts to the toppings too. Also, if you tend to cook your porridge in the microwave, this recipe can be adjusted to cooking that way too – just cook the porridge and apple in separate dishes, then combine in one dish with the mincemeat and pop back in for 30 seconds to heat through. Top with cranberries as above.
They say now, that what you have for breakfast on Christmas day is JUST as important as what you eat throughout the rest of the day – this would make one awesome Christmas morning brekkie! Enjoy!
