You can’t beat a recipe passed down from your elders. You know it works, you know it’s tasty, and you know it’s most probably going to impress. Well, this one was no different!

Whilst at home a little while ago, my Nanny told me about a new salmon recipe she’d been making quite often – Salmon baked with low fat cream cheese and plum tomatoes. It sounded fab and so I had to give it a go.

It’s super simple and easy, doesn’t take long to cook, yet it’s delicious and nutritious, making it a perfect mid-week meal. What’s more, it’s only a few ingredients – don’t you just love those recipes which need five ingredients or less?

It’s great served with cous cous and vegetables, but would be just as good with salad, or crushed new potatoes.

I made it for Alex last week, and he was seriously impressed. He doesn’t usually eat tomatoes, and turned his nose up when I passed him his plate, but said he’d try it for me. Next minute, he was saying he might have even enjoyed it with more tomato!! Can you believe it?!

You have to give this a go! It’s now a go to recipe for mid-week when I have limited time to whip something up after the gym 🙂

Recipe|| Baked Salmon with Cream Cheese & Plum Tomatoes

A recipe passed down from my Nanny. Easy to make and super delicious, perfect for mid-week dinner. 

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes
Servings 2

Ingredients

  • 2 salmon fillets boned
  • 2 tbsp low fat cream cheese
  • 1/2 tin plum tomatoes
  • black pepper for seasoning

Instructions

  1. Pre-heat the oven to 200 degrees celsius. Cut a piece a foil for each salmon fillet, big enough to wrap into a parcel, leaving enough space for the toppings too.

  2. Place each fillet on it's own piece of foil. Spread each piece of salmon with 1 tbsp. cream cheese.

  3. Cut a large plum tomato (from the tin) in half and lay on top of the cream cheese. Do the same for both fillets. Sprinkle with black pepper.

  4. Wrap the foil around the salmon into a parcel and bake in the oven for 25mins. 

  5. Remove the parcels from the oven, and serve with your choice of side. Perfect with a salad, potatoes or cous cous and seasonal vegetables.
