Mondays. Not the best day of the week by far. Surely even people who love their jobs don’t really like Mondays that much.
The early start after a weekend of restful sleep, the to-do list ever-growing once again (or building on last week’s which didn’t get finished), the dressing smart (or reasonably), and having to choose what to wear super fast, and the feeling of always being switched on. Gosh, no wonder weekends are wished to arrive sooner!
Mondays over the past couple weeks have been made worse by the weather, but I’ve found the perfect cure – a delicious dinner. Comfort food at it’s best.
A delicious dinner, can turn an evening round, and make it seem brighter. That time spent in the kitchen cooking can be super therapeutic, if you just take off the frown-y face, pop some music on in the background, and just be in the moment – enjoy. Switch off for a bit.
Comfort food is where it’s at when the weather is so miserable too. So for today’s recipe we’re carbing it up, and I’m giving you some inspiration for those dreary days, when we just need something to look forward to, a mouthwatering tasty meal to make that day feel worth it.
This creamy garlic sausage and spinach pasta is pretty quick and easy, so great for if you have limited time. I’m not a huge sausage eater, but using sausage meat (no tough skins), combined with mushrooms and spinach, it’s a flavour combo I couldn’t resist – the meat adding a touch of saltiness, the mushrooms a rich earthy depth and the spinach a touch of something fresh.
Served by itself, or with a sprinkle of parmesan (more cheese!), even Alex was impressed with how good a pasta dish really can be.

Creamy Garlic Sausage & Spinach Pasta
- 150 g tagliatelle
- 1 tbsp vegetable oil
- 225 g sausage meat or 4 sausages with skin removed
- 6 button mushrooms sliced
- 125 g garlic & herb light soft cheese
- 60 g spinach or two handfuls, roughly chopped
Bring a pan of salted water to the boil, add the pasta and cook for about 10 minutes.
In a frying pan, heat the oil. Break the sausage meat into pieces, add to pan, and cook until browned. Add the mushrooms and cook for a further couple of minutes.
Drain the pasta, stir in the soft cheese. Remove the sausage meat and mushrooms from the heat and add to the creamy pasta. Stir well and heat for a further minute.
Remove the pasta from the heat and stir in the spinach. Place a lid on the pan and leave for a minute for the spinach to wilt slightly.
Serve between two dishes, on its own or with a sprinkling of parmesan and a couple of asparagus sprigs.
