Scrambles are simple and quick, yet super tasty if you get the right flavour combinations.
They make a quick brilliant brunch, for those weekends when you need a speedy option before heading out for the day, or even a delicious light dinner for those evenings when you’re limited on time. What’s more, scrambles are a great source of protein for post-gym meals too.
With asparagus still in season, I’m making the most of this versatile vegetable – it’s one of my favourites!
Combined with ham in a scramble, served on toasted seeded bread and topped with sliced avocado, it’s been a winning brunch dish recently!

Asparagus & Ham Scramble
Quick and easy, yet simply delicious
- 3 asparagus stalks
- 2 slices honey roast ham
- knob butter for frying
- 2 eggs beaten
- salt and pepper for seasoning
Chop the asparagus stalks, and slice the ham.
In a frying pan, melt the butter. Add the ham and asparagus, and fry lightly for a 3-4 minutes.
Add the eggs, and season, then heat over a medium heat, constantly stirring. Cook until the eggs form a scramble and are cooked through.
Serve on a piece of toast and top as desired - it's delicious served with half an avocado! Enjoy.
