Eton Mess is a classic. A truly British dessert loved by many.

The fresh, juicy berries, light and airy, sweet meringues, runny coulis, and thick indulgent cream, a dreamy combination. A treat to be devoured every now and then.

But for those moments when I crave a classic, like an Eton Mess, during the week I like to put a healthy twist on it. Less guilt, no feeling like I need to gym to burn it off, and yet still just as delicious.

And that’s exactly what I’ve done with this Eton Mess version.

Cheats Eton Mess Recipe

Using low fat or fat free vanilla yoghurt instead of cream, with plenty of fresh strawberries, sauce and crunchy meringue, I created a seriously tasty dessert, which radiates the feel of the original without the added fat.

Super speedy, it’s also perfect for those occasions when you’ve forgotten you’ve got guests over and need to whip up a pudding. Trust me, it’s sure to be a winner too!

Cheats Eton Mess

A healthy take on the classic. Perfect for a mid-week treat, or a quick pudding for when you have unexpected guests

Prep Time 10 minutes
Servings 2

Ingredients

  • 200 g fresh strawberries
  • 3 meringue nests
  • 250 g thick vanilla yoghurt
  • strawberry sauce optional

Instructions

  1. Put two strawberries aside for presentation. Remove the heads from the remaining strawberries and chop into small pieces.

  2. Roughly crush the meringue nests and leave to the side.

  3. Split half of the chopped strawberries between two dessert dishes. Add a spoonful of yoghurt and a handful of crushed meringue to each. 

  4. Repeat step 3 with the remaining strawberries, yoghurt and meringue, layering up the ingredients in the dish. 

  5. Top with a drizzle of strawberry sauce (optional) and the whole strawberries for presentation.
