Fajitas are always a winner. Ready in 20 minutes. Mid-week, quick & easy dinner. We used to buy those sachets of seasoning. You know the ones. The individual packets which say there’s enough to shake over meat for four, but you pretty much use it all up for two. they always worked well, but aren’t always the most economical way to enjoy a fajita dinner. The all inclusive buffet on holiday always reminds me how much more I need to cook fish or seafood, and this year was no different. In Costa de la Luz for the week earlier this month we had it all, red fish, catfish, swordfish, octopus, squid rings, mussels, salmon, and all manor of other white fish fillet which I can’t remember the names of. The one thing I didn’t have however was prawns. Keen to try something new, rather than one of my trusty risotto dishes, I decided I’d whip up a red curry. Is it just me or does this warm weather change your appetite? Don’t get me wrong, I still enjoy the odd comfort meal – burgers, chilli, sausage and mash – but quite often, I don’t fancy anything too heavy. Not too carby, or meaty. Something with plenty of veg so I feel like I’m nourishing myself, especially after a long day at work. You can’t beat a recipe passed down from your elders. You know it works, you know it’s tasty, and you know it’s most probably going to impress. Well, this one was no different! Whilst at home a little while ago, my Nanny told me about a new salmon recipe she’d been making quite often – Salmon baked with low fat cream cheese and plum tomatoes. It sounded fab and so I had to give it a go.
