Mondays. Not the best day of the week by far. Surely even people who love their jobs don’t really like Mondays that much. The early start after a weekend of restful sleep, the to-do list ever-growing once again (or building on last week’s which didn’t get finished), the dressing smart (or reasonably), and having to choose what to wear super fast, and the feeling of always being switched on. Risotto is one of those dishes which always takes longer to cook than you expect. Albeit dinner is then usually a delicious dish of flavours and spices, and totally worth the wait, like this one was. A tomato based, herby risotto, with a decent chilli kick, packed with sausage pieces and peas, and topped with a good sprinkling of Parmesan. I actually sat down, took my first mouthful and did a little sigh.
