There are three reasons I love it when Alex heads out for the evening: Me time I get an early night and the bed to myself…to start with I cook veggie Alex is a huge meat eater, which many of you will know from previous posts. This means whenever we’re both in and cook for each other, it’s going to be a meat based dish and will also always feature carbs (rice, potatoes or cous cous if I’m lucky). But there are SO many veggie and vegan ideas I have, that I love getting creative when he’s out. I even usually make enough to have for lunch the following couple of days too, being super productive. The last time I got veggie inventive in the…

Pancakes. There are so many ways of making the batter, there’s thick fluffy pancakes and thin crepes, flavoured batters, and all manner of toppings that you can pretty much shake it up each time. We seem to be having pancakes almost every weekend now, albeit some are pretty healthy, but we’re hooked. A Saturday morning usually goes something like this… me: “what shall we have for brunch today? Shall we try something new?” (We both usually go to the gym Saturdaymorning so don’t eat until 1ish) Alex: “Oh. I thought we were having pancakes.” Me: “Oh ok. Let’s have pancakes. Surely I can’t be the only one. Well what if you both didn’t have to get out of bed, except to answer the front door? Ok, so it’s not exactly brought to you whilst in bed but almost… Collecting our brown paper bag from the delivery…

OMG guys, so this brunch is AMAZING! I know I’m blowing my own trumpet a little, but seriously, if you like cheese on toast, this is like the next level! So I was craving an indulgent brekkie. You know when you’ve had a long hard week at work and all you want is a treat after your spin sesh on a Saturday morning? Normally I go for a healthy start to the day, especially after my spin sesh, but this time I just couldn’t help myself. Taking inspiration from a brunch I’d had out recently, I decided to make Alex and I chilli cheese on toast topped with fried eggs. I knew I wanted the toast to be kinda doughy, not too toast-like, so I…
