This is a super easy, yet deliciously tasty dish I’ve been making myself for breakfast or lunch, when I fancy some veggie goodness, and a little protein – it’s great for after a morning gym session too! The best bit about this, is that you can adapt the recipe to use whatever vegetables you have available in the fridge, and you can even prepare the ingredients the night before, making it super speedy for those mornings when you have little time to relax over a prolonged breakfast. It has a delicious taste, with the onion adding extra depth, and the egg yolk making it almost creamy in places. The nuts also add a delicious crunch! I actually just had this for lunch today too! So here’s…

I thought I’d shake it up this week with a lunch recipe… Yes I’m one of those people who likes to have lunch sorted for the week ahead, on a Sunday. It just saves money, and also time as I tend to wander round a supermarket on average 3 times before deciding what I actually want to eat. Nightmare I know! I do like to have relatively healthy meals in the week, so that I can treat myself more at weekends. It’s just the way I work – it helps me rationalise the naughty treats on a Saturday or Sunday, like the cinnamon pancakes with caramelised Apple Alex made me for brunch last weekend. By the time it gets to Friday, you’re ready for a treat right? A couple of Friday’s ago, I decided that it’d been a long week, I’d been at client meetings, catching up at work after my holiday and I’d had a migraine to battle with too, so decided that I deserved a nice lunchtime treat. Out I popped, by myself, to find a nice little quiet spot to shut off from work and enjoy just a little self indulgence, and peace and quiet. Last week I earnt some ultimate girlfriend brownie points with some delicious homemade falafel I made for lunches. On a spur of the moment whim after work, I decided I need to make lunches for the rest of the week  – I always try to pre-prepare so I don’t spend a fortune and get overwhelmed with the masses of lunchtime options near work. I do work near Covent Garden after all.  I wanted to try and create something new, but something I knew Alex would enjoy for lunch – In other words, I wanted to wow and make a good impression to others too. I mean how good am I, making him lunch?  Alex has always enjoyed a falafel and actually is the one to have introduced me to them…

Korean food is one of those cuisines which is growing rapidly in London, and with places like On the Bab serving mouth-wateringly tasty buns, salads and crispy chicken, you can understand why. All you have to do is look at the menu and it’ll set your tummy off growling and rumbling. On the Bab is really close to my office, so many of my colleagues had already been. Making us all jealous with their stories after client meetings and lunch trips to the busy Covent Garden hot spot, I just had to go along and see for myself what I was missing out on.One of the girls and I went along straight from work recently, for a catch-up over some good food. Although it was mid-week,…
