Risotto is one of those dishes which always takes longer to cook than you expect. Albeit dinner is then usually a delicious dish of flavours and spices, and totally worth the wait, like this one was. A tomato based, herby risotto, with a decent chilli kick, packed with sausage pieces and peas, and topped with a good sprinkling of Parmesan. SO, sometimes I’m lazy. You know those days where you just can’t be bothered to do much? I know you have those too. Well, some days I like to just stay in, snuggled up on the sofa, with my laptop and a good tv series. Sometimes the days start with a gym sesh, making me feel less guilty for the laziness, others I roll out of bed and only make it the sofa. I’d heard so many amazing things about Flat Iron, from numerous different people, and they’d always said that the queue was worth it. And I can now tell you, Flat Iron didn’t just meat all my expectations, it totally exceeded them. And now…the steaks are raised for any other meat restaurant on my list. Simple yet seriously satisfying – you can’t beat a good avo on toast. I love avocado! It’s just so creamy and adds a delicious flavour as well as keeping you full. Ok, so I know it’s not calorie free, but it’s full of good fats which I don’t always get enough of – unless I’ve been eating peanut butter of course, but that’s only on gym days. It not only tastes delicious on toast by itself, it’s amazing with poached eggs, or even as a side to a cooked breakfast.
